Quick Black Bean Refried Beans

Generally I only make refried beans when I’m making 7 layer dip, but since it’s Cinco De Mayo and we’re big time Mexican food fans we’re splurging. For time this recipe calls for canned beans. Dried beans soaked and boiled can be substituted. Either way rinse your beans, doing so removes extra salt and makes them less farty.

  • 1 can black beans
  • 1 tablespoon vegetable oil
  • 1 large diced onion
  • 4 cloves garlic, minced
  • 1 cup chopped green chiles/jalepeno
  • 1 1/2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/4 cup chicken broth
  • 1 tablespoon cider vinegar
  • salt and pepper to taste
– Gather all ingredients

The Heat of hot peppers is mostly in the pith and seeds.  If you prefer milder flavours simply remove them.  Careful what you touch with your fingers if you do.

– Chop onions, garlic and peppers

 

– Add oil to hot fry pan

– Add onions and peppers to fry pan, saute about 2 minutes

– add garlic, cumin, chili powder, continue to saute another minute

– Add beans, cook about eight minutes

 

– Continue to stir while mashing with a potato masher

 

– Add cider vinegar and salt and pepper to taste

 

– Add stock to bring to constancy you like.

 

– Eat immediately.
